It's not just a matter of healthy food, it's a state of mind, awareness of a moral and ethical aspect to this kind of conduct together with the urge to prefer right over wrong, in this case, vegetarianism over omnivore/carnivorous food intake.
You can always say:
"Vegetarianism is a personal choice. Don’t try to force it on everyone else."
Well in that case I would have to answer from a moral standpoint, actions that harm others are not matters of personal choice. Murder, child abuse, and cruelty to animals are all immoral. Our society now encourages meat-eating and the cruelties of factory farming, but history teaches that society also once encouraged slavery, child labor, and many other practices now universally recognized as WRONG!
